Three-Ingredient Paleo Pancakes

I know I post a lot of pancakes on this space, but I just can’t help myself.  Even with the smallest tweak, if it is something that has made my breakfast that much better, I just have to share.

The pancakes that I am making these days are just three ingredients (not counting the toppings) and take no time to make, especially if you have a vitamix.

Eggs are a funny food to me.  Well, I guess you could say I’m funny about eggs.  OK, particular.  I’m really particular about eggs.  I say over and over how I don’t like to eat eggs for breakfast (omelettes, scrambled, etc.).  My fiance always refutes that I have eggs for breakfast every morning.  Yes dear, but I disguise them as pancakes.

Three-Ingredient Paleo Pancakes

  • 1 egg + 1 egg white, beaten
  • 1 banana or plantain
  • 2 large tablespoons of ground flax

Heat a large skillet over medium high heat.  Coat with coconut oil or cooking spray.

Combine all ingredients in a high-speed blender or food processor.  Blend until creamy.

Pour batter onto skillet to form pancakes.  Cook 4-5 minutes or until able to flip.  Cook 2-3 more minutes.  Transfer to a plate and serve immediately.  Top with cinnamon. nut butter, berries and/or maple syrup.
