Nut-Free & Egg-Free Protein Granola Squares
Due to popular demand, I wanted to create a nut-free and egg-free version of my Paleo Protein Granola Squares! Given that I used peanut butter, it doesn't make them Paleo, so feel free to sub out with sunflower seed butter. Otherwise, same great taste and nutrition, and now those with intolerances to those foods can enjoy them too!
Nut-free & Egg-free Protein Granola Squares
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/2 cup hemp hearts
- 1/2 cup shredded coconut
- 2 teaspoons cinnamon
- 3 tablespoons protein powder of choice
- 1/2 teaspoon sea salt
- 1/2 cup peanut butter (sunflower seed butter to make them paleo)
- 1/4 cup coconut nectar (honey would work too)
- 1/2 cup melted coconut oil
- 1 flax egg (1 tablespoon ground flax mixed with 3 tablespoons water; allow to sit for 10 minutes)
- 1 teaspoon vanilla
Preheat oven to 350 degrees. Line an 8x8 baking dish with parchment paper.
Place pumpkin seeds, sunflower seeds, hemp hearts and coconut flakes in a food processor until finely chopped. Transfer to a large bowl. Add protein powder, sea salt and cinnamon. Stir to combine.
In a separate bowl, add flax egg, peanut butter, coconut nectar, and coconut oil. Whisk to blend.
Incorporate wet mixture into dry and stir until sticky batter is formed. Transfer to baking dish and press firmly until evenly distributed.
Bake 27-30 minutes, or until edges are golden brown, turning halfway to ensure even cooking.
Allow to completely cool! This is important as the egg normally works as a binding agent and will crumble otherwise. To ensure the bars hold together, transfer to the fridge before slicing into squares (the coconut oil will "harden" and hold everything together).
