Protein Granola Squares


With all of my recent travel, I wanted to create a healthy breakfast option to take with me wherever I go. I also had a plethora of protein powders and nuts and seeds I wanted to use up. These granola squares are so delicious and can be made with whatever you have on hand! 

Protein Granola Squares 

  • 1/2 cup sunflower seeds

  • 1/2 cup pumpkin seeds

  • 1/2 cup hemp hearts (or 1/4 cup extra of each pumpkin seeds and sunflower seeds)

  • 1/2 cup shredded coconut flakes

  • 2 teaspoons cinnamon

  • 2 tablespoons protein powder of choice

  • 1/2 teaspoon sea salt

  • 1/2 cup nut butter of choice

  • 1/3 cup coconut nectar (honey would work too)

  • 1/2 cup melted coconut oil 

  • 1 egg, beaten (or 2 egg yolks)

  • 1 teaspoon vanilla 

Preheat oven to 350 degrees. Line an 8x8 baking dish with parchment paper. 

Place sunflower seeds, pumpkin seeds, hemp hearts and coconut flakes in a food processor until finely chopped. Transfer to a large bowl. Add protein powder, sea salt and cinnamon. Stir to combine.

In a separate bowl, add the nut butter, coconut nectar, coconut oil, and vanilla extract. Whisk to blend. Add egg and whisk again. 

Incorporate wet mixture into dry and stir until sticky batter is formed. Transfer to baking dish and press firmly until evenly distributed. 

Bake 30 minutes, or until edges are golden brown, turning halfway to ensure even cooking. 

Allow to completely cool before slicing into squares. I even suggestion transferring to fridge before slicing so coconut oil "hardens" and keeps everything held together!
