Three Ingredient Paleo Pancakes

A gluten-free version with just three ingredients, these pancakes offer a protein-packed way to start your day. 

Three-Ingredient Paleo Pancakes

  • 1 egg + 1 egg white, beaten
  • 1 banana or plantain
  • 2 large tablespoons of ground flax

Heat a large skillet over medium high heat.  Coat with coconut oil or cooking spray.

Combine all ingredients in a high-speed blender or food processor.  Blend until creamy.

Pour batter onto skillet to form pancakes.  Cook 4-5 minutes or until able to flip.  Cook 2-3 more minutes.  Transfer to a plate and serve immediately.  Top with cinnamon. nut butter, berries and/or maple syrup.
