Three-Ingredient Potato Chips

A prime example of my counting colors philosophy: Potatoes! I get a lot of questions about eating potatoes. In my book, they are a one-ingredient food with nutrients, so to me, they are a wonderful food. However, quality does matter, so if you compare the ingredients below to your typical chip, I guarantee the list on the latter might be a bit longer. And even if not, I bet the oil could be upgraded. Manufactured fats such as safflower oil, sunflower oil, canola oil, etc., oxidize under high heat. Avocado oil which is much more stable is a wonderful oil to use! 

Three-Ingredient Potato Chips

  • 2 cups thinly sliced potatoes (using a box grater)
  • 2 tablespoons avocado oil
  • Sea salt to taste

Preheat oven to 400 degrees. 

Place potatoes in a medium bowl and add avocado oil and sea salt. Toss to combine.

Place "chips" on two baking sheets line with parchment paper and bake 30-33 minutes, turning the pan halfway through to ensure even cooking. 

Lay flat on a cooling rack.
