Cinnamon Raisin Oatmeal Bake

To make a recipe healthier, all it takes are a few simple swaps. This cinnamon raisin oatmeal bake is a prime example! The end result is a version free of gluten, dairy, and refined sugar. 

Cinnamon Raisin Oatmeal Bake 

  • 2 tablespoons ghee

  • 2 cups gluten-free old-fashioned rolled oats

  • 1/4 cup coconut sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 can full-fat coconut milk (or 2 cups dairy-free milk of choice)

  • 1/4 teaspoon sea salt

  • 3 teaspoons cinnamon

  • 1 teaspoon vanilla

  • 2 eggs, beaten

  • 1/2 cup raisins

Preheat oven to 350 degrees.

Melt ghee in a cast-iron skillet over medium heat. Add oats and toast 3-4 minutes, stirring frequently until fragrant. Remove from heat. Add coconut sugar, baking powder, baking soda, cinnamon, and sea salt to skillet and stir. 

In a medium bowl, add eggs, coconut milk, and vanilla. Whisk until combined. Pour mixture into skillet and stir until everything is incorporated. Add raisins and stir once more. 

Bake 30-32 minutes. Should be soft and spongey to the touch and toothpick comes out clean. Top with nut butter, fruit, yogurt and/or maple syrup for extra sweetness if desired
