Crushed Cashew Nori Bites

 I always have nori on hand. It is a nutritious "wrap" option and makes for a quick and delicious lunch. The contents don't have to resemble traditional sushi either! Roll up whatever you would like. This vegan version has to be one of my favorite nori concoctions and make a great snack, appetizer or side dish. Dip in  coconut aminos  to round them out!

This vegan version has to be one of my favorite nori concoctions and make a great snack, appetizer or side dish. Dip in coconut aminos to round them out!

Crushed Cashew Nori Bites

  • 2 sheets nori
  • 1/4cup crushed cashews
  • 1 avocado, diced and mashed
  • 1/2 cup sprouts 
  • 1 cup shredded cabbage and carrots 
  • coconut aminos (optional)

Preheat oven to 400. Line a baking sheet with parchment paper and spread crushed cashews evenly. Bake 12-14 minutes until golden brown and fragrant. Remove from oven and allow to cool 10 minutes

Lay nori flat. Spread mashed avocado and layer with sprouts and shredded cabbage/carrots. Sprinkle crushed cashews on top. Fold in sides and roll. Slice evenly into "rolls." Enjoy!
