Chocolate Chip Collagen Cookies

Chocolate Chip Collagen Cookies (Paleo, Grain-free)

When Ancient Nutrition sent me some of their products to try, I knew that I would be incorporating their Chocolate Collagen in to a cookie of some sort. This batch of protein-packed cookies is the result!

Chocolate Chip Collagen Cookies

Makes 16 - 18 cookies

Gluten-free, Grain-free, Dairy-free optional, Soy-free, Paleo

  • 1½ cups almond flour

  • ⅓ cup coconut sugar

  • ¼ cup Ancient Nutrition Chocolate Collagen Protein Powder

  • 2 tablespoons unsweetened cocoa powder or raw cacao powder

  • ½ teaspoon baking soda

  • ¼ teaspoon sea salt

  • 2 eggs, beaten

  • ¼ cup creamy almond butter

  • 1 teaspoon vanilla extract

  • ¼ cup melted coconut oil or melted ghee

  • ½ cup dairy-free chocolate chips (I suggest Enjoy Life brand)


Directions:

  1. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.

  2. In a large bowl or stand-up mixer, combine the almond flour, coconut sugar, chocolate collagen protein powder, cocoa powder or raw cacao powder, baking soda, and sea salt. Stir to blend.

  3. In a separate medium bowl, combine the beaten eggs, almond butter, and vanilla extract. Whisk.

  4. Pour the egg mixture into the bowl with the flour mixture, and while beating on medium speed, incorporate the melted coconut oil or ghee. Continue to beat until a dough is formed. Fold in the chocolate chips.

  5. Using a cookie scoop or spoon, place cookie of desired size on the baking sheets, spacing them at least 2 inches apart. Bake for 12-15 minutes. Cookies will look undercooked when you take them out, but they will set as they cool. Allow the cookies to cool for at least 10 minutes on the baking sheet before transferring to a wire rack to cool completely.

*If you don’t use the protein powder, I suggest increasing the coconut sugar to 1/2 cup and the cocoa powder or cacao powder to 1/4 cup
